In college I shared an apartment with two other guys who loved to fish, as I did. This was fortunate for us personally but unfortunate for our collective grade-point averages, as we spent a little too much time matching the hatch instead of cracking the books. Nevertheless, by the time we (eventually) graduated we were quite adept at catching, cleaning, and preparing a variety of fish species in a number of ways. While this chapter won't cover some of those creative specialties (crappies and eggs with beer was a favorite), it will go over the basics of gutting, filleting, preparation, and cookery; as well as what to do if the fish you catch is just too big to eat.
