A lot of the tricky work will already have been done for you. When having a party of inexperienced anglers aboard (we're assuming you're one, of course), the mate will already have set the hook. This can be a difficult maneuver, because oftentimes fish will not hook themselves when they strike the bait. Sometimes they just rise up to inspect it or mouth it; other times they'll grab it and swim away but not swallow it. The captain and mate know what to do in each case. Oftentimes it involves speeding up or slowing down the boat, and/or dropping back, which means putting the reel in freespool so that the bait stops and sinks in the water, allowing the fish to grab it or run with it. Sometimes the fish won't take the bait at all.
